Vitumbua are described as fluffy balls of yumminess! They are gluten free and vegan because the base of the vitumbua is rice.
You soak rice for several hours then blend it with sugars and coconut milk in a blender. The key is that the blender needs to be able to pulverize the rice down to a flour consistency. Mine did not. So I can not fully attest to this recipe but I can vouch for its deliciousness. Despite the rice texture, I still ate a large number of these and I even made mine in a mini muffin tin 🙂

To cook the vitumbua without the special pan simply place a mini muffin tin in an 350℉ oven and cook for 5 minutes then remove, flip and cook for another 5 minutes. They are lightly spiced, sweet and very tasty even if you don’t get the texture quite right.
The other unique thing about these treats is they are leavened with yeast. Yes yeast.
